Beef Tongue Salad

Ingredients

  • 1 large beef tongue
  • poaching liquid for the tongue: 1 leek,1 onion,1 carrot ,4 bay leaves,20 white peppercorns, 1/2 cup salt, 1/2 btl white wine, 2 gals water, 1 bunch thyme, 1 bunch rosemary
  • 20 green peppercorns
  • 1 tbsp fresh chopped rosemary
  • 1 tbsp chopped fresh thyme
  • 6 cornichons {Colorado pickles}
  • 1 tbsp Dijon mustard
  • 1 shallot, chopped fine
  • 2 tbsp edible flowers
  • 2 tbsp grapeseed oil
  • 1/2 cup heavy cream
  • 1/2 cup white wine
