Seared Dry Aged Colorado Lamb Chops

Ingredients

  • 1 rack of Colorado lamb
  • 2 tbsp olive oil (1 for the lamb. 1 for the mushrooms)
  • 1/2 cup chicken stock
  • 1 large shallot, sliced raw
  • 1 large shallot, sliced and gently sautéed
  • 12 roasted garlic cloves
  • 1/2 cup white wine
  • 4 pea shoots for garnish
  • 4 watercress sprouts for garnish
  • 2 garlic chive blossoms as garnish
  • 1/3 cup cut parmesan
  • 1 tsp thyme
  • 3 green onions
  • 1 cup baby mushrooms
  • 1 cup sliced shitake mushrooms
  • 1 cup cooked orzo pasta
  • 4 tbsp butter
  • 1 lemon
