Pan Seared Foie Gras over caramelized granny smith apples

Ingredients

  • Duck Foie Gras - 6 oz.
  • Granny Smith Apples - 2 each
  • Golden Raisins - 30 each, soaked in ¼ cup hot water, and 2 tbsp. fine cognac
  • Lemon Zest - 1 tsp. sliced thin
  • Candied Pecans - 1 cup pecans mixed with 3 tbsp. honey and baked for 30 minutes at 275 degrees
  • Shallot - 1 each chopped fine
  • Garlic - 1 tbsp.
  • White Sugar - 2 tbsp.
  • Salt and Pepper Fresh Ground White Pepper to taste
